BREAKFAST: Soaked Chia Oats with Poached Nectarines
– 3/4 cup oats
– 1/4 cup chia seeds
– 1 cup almond mylk
– 1 tbsp rice malt syrup
(Mixed and set in the fridge for min. 1 hour)
– 2 x yellow nectarines
– 1 tsp vegan butter
(Fried over the heat for 10 mins or until soft/golden)
Served with Natural Coyo (*) and dark chocolate drizzle

LUNCH: Sweet Potato Mash & Sundried Tomato Sausages
– 1 x large sweet potato
– 1 x tbsp vegan butter
– nutritional yeast (as desired)
– paprika (as desired)
Mashed to satisfaction
– 2 x Syndian Sundried Tomato Sausage
Fried in olive oil
Served with tomato sauce

DINNER: Chickpea Tempeh & Sweet Potato Salad
– 1 x small sweet potato
(Baked with olive oil, nutritional yeast, salt and garlic powder)
– 1/2 pack Organic Village Chickpea Tempeh
– 1/4 head of broccoli
(Fried with olive oil, nutritional yeast, salt and garlic powder)
– 1/4 cup almonds (soaked)
– 1/4 cup cashews (soaked)
– dash of olive oil
– 2 tbsp nutritional yeast
– garlic (as desired)
– salt (as desired)
Served with spinach and sesame seeds
