BANANA STEEL CUT OATS (serves 5 – 6)
2 cups steel cut oats
4 cups non-dairy milk
2 large bananas, mashed
1 – 2 teaspoons cinnamon (optional)
Toppings: coconut yogurt & fresh berries
Add oats and milk to a saucepan and bring to a boil. Reduce to low and simmer for 15 minutes, stirring occasionally. After 15 minutes, stir in banana (and spices if using) and simmer for another 5 minutes. Let cool slightly before transferring to jars and adding desired toppings.
