PUMPKIN HUMMUS:
2 cups chickpeas
2 garlic cloves
1-1.5 cup precooked pumpkin (depending on how pumpkin-y you want it)
1/4 cup tahini
3 tbsp lemon juice
5 tbsp water
1 tsp salt
1/t sp cumin
1/4 tsp cinnamon
1/4 tsp paprika

CAULIFLOWER HUMMUS WRAP:
(for 1/2 a large head of cauliflower)
juice of 1/2 a lemon
1 tsp curry powder
1 tbsp nutritional yeast
– Cut cauliflower into bitesized florets & coat in lemon juice, curry, and nutritional yeast.
– Spread on a lined baking sheet and bake at 400F for about 25-30 minutes
For the wrap:
pumpkin hummus
avocado
quinoa
sliced red peper
carrot
spinach
green onion

I added in about 1/3 cup vegan chocolate chips & a 2-3 tbsp of sunflower seeds! Add your fav ingredients!

QUINOA VEGGIE STEW:
4 cups no sodium vegetable broth
2 cups cooked quinoa
1 tin (796ml) diced tomatoes (do not strain juice)
1 medium yellow onion (diced)
4 garlic cloves
1 medium zucchini (diced)
2 cups diced carrots
3 cups chopped potatoes
3 ribs of celery diced
5 stalks of kale (de stemmed)
1 can rinsed navy beans
1.5 tsp salt (use less if using salted broth)
1/2 tsp pepper
1/2 tsp paprika

SMOKEY MUSHROOM PINTO BURGERS:
1 can drained and rinsed pinto beans
1 cup diced mushrooms
1 cup chopped spinach
1 cup cooked brown rice
1/2 cup diced onion
2 cloves garlic (minced)
1 tsp smoked paprika
2 tsp cumin
1 tsp dried basil
1/2 tsp salt
1 tbsp tomato paste
1 tbsp tamari
1/2 cup oats (ground into coarse flour texture)
– Sautee garlic and onion until translucent, then add mushrooms and spinach and cook for 5-7 minutes.
– Combine all ingredients into a food processor and process until well combined. Form into 4-5 equal sized patties, and place on a lined baking sheet. Bake for 30-35 minutes, flipping halfway.
