Tasty vegan breakfast, lunch, and dinner recipes with an easy snack idea that’s perfect for busy days! Hope you enjoy seeing what a day of vegan eats looks like for me πŸ™‚ RECIPE BELOW

β†  BAKED FRUIT

Pit and chop date. Add to a bowl with chopped apples and plus. Squeeze fresh orange or lemon juice on top and sprinkle generously with cinnamon. You can also add a drizzle of maple syrup and/or a sprinkle of sea salt if desired.

Bake at 350 degrees for 15 minutes or until soft and very fragrant. Store leftovers in the fridge for 3-5 days.

NOTE: You can also do this with pears, persimmons, peaches, nectarines…so many options! Serve on oatmeal, vegan yogurt bowls, or on vegan vanilla ice cream with a sprinkle of granola on top πŸ™‚

β†  CUMIN TAHINI SALAD DRESSING
2 tbsp tahini
3 tbsp water
1/2 lemon
1/2 tsp garlic powder
1/8 tsp cumin
1/4 tsp salt

Combine all ingredients in a small container with a lid. Cover and shake well until well combined. The dressing will thicken if you let it sit in fridge for a few minutes. Feel free to add more or different seasoning if desired.

LOVED this episode. Especially the end when they started talking about how to deal with “imperfect” vegans. Very cool perspective from three incredible activists within the vegan movement πŸ™‚

– Show name: Food for Thought
Episode: “Are Avocados Vegan?”

LOVED THIS ONE TOO! Especially towards the end. Such a refreshing perspective about the importance of taking the pressure off of people to be perfect – thereby creating a huge barrier to entry and ultimately fewer vegans in the world. If we want to change the world, we have to be practical and meet ourselves and each other where we’re at with compassion and love.
