I just make our meals up as we go and I don’t have measurements but our meals went something like this…
~ Smoothie bowls for 3 ~
2-3 frozen bananas
handful of frozen strawberries
2 handfuls of frozen pink dragon fruit
few chunks of frozen mango
heaped spoon of both flaxseed meal & chia seeds
macca root powder
Blend it all up. Serve topped with chopped banana, hemp seeds, buckwheat grouts, toasted granola and don’t forget almond butter!
~ Chickpea Tuna Sandwiches ~
( recipe inspired by @carlytaylor269 )
2 cans of chic peas drained and rinsed
Dollop of vegan mayo
2 sheets of dried seaweed
Half a small onion (chopped if you’re going to mash by hand)
Juice from half a lemon
Sriracha if you want to spice it up.
Mash or blend 🙂
Add onto sandwhiches with:
vegan cheese, seur kraut, greens, tomatoes, cucumber, capsicum or whatever salads you have in the fridge.
~ Left over Red Lentil Dahl ~ (makes alot)
Heat up some olive oil and fry chopped ginger, garlic, cumin, tumeric, paprika and a diced tomato.
Add to a big saucepan or wok
~1 can of coconut cream, veggie stock, 2 cups of lentils (preferrably soaked over night), 3 cups of water, and 2-3 potatoes, half a cauliflower, half a broccoli, mushrooms or any veggies you have in your fridge.
Simmer until veggies are soft . Serve with or without rice.
