CREAMY COCONUT POTATO LENTIL SOUP recipe
Serves a family of 4-6 people
6 cloves garlic, minced
1 medium onion, diced
3 pounds of potatoes, diced
2 cups red lentils
4 cans of coconut milk
3 medium carrots, chopped
3 sticks celery, chopped
1/2 pound Mushrooms, diced
1 medium Broccoli, diced
1/2 head cauliflower, diced
1 large zucchini, diced
1 tbsp oregano or pizza seasoning
1 tsp salt
1 tbsp black pepper
1 tsp curry powder
Optional: 1/4 cup apple cider vinegar and 1/4 sauerkraut for an extra kick!
In a small pot boil the lentils with 4 cups of water. Once it comes to a boil bring down to low heat and keep the lid on. Simmer for about 30 minutes or until the water has evaporated.
While that’s cooking sauté the onion and garlic in 1/2 a cup of water. Then add the carrots, celery and potatoes 5 minutes after and 2 cups more of water. Cover and let cook on medium heat for 10 minutes. Then add the rest of the veggies, coconut milk, and seasoning and cook on med/low heat covered for about 20 minutes, stirring occasionally. Then mix in the cooked lentils and let simmer on low heat for 5 minutes or more. Then serve and enjoy!
