Meal Prep Recipes:
*all these are for 6 servings +
1.) Tofu Halloumi Bowls with Lemon Potatoes & Kale Salad

– 24 oz. fingerling potatoes, halved
– 3 packs Organic Extra Firm Tofu, sliced
– 2-3 Red Bell Peppers, chopped
– 6-8 oz. Dinosaur Kale
– 6 Radishes, quartered
– 1 Red Onion, chopped
– 1-2 Lemons
– 6 Tbsp. Za’atar
– 6 Tbsp. Nutritional Yeast
* Oil for potatoes and cooking Tofu
*Salt and Pepper

2.) Lentil Chorizo Chili

– 1 Tbsp. Grapeseed Oil
– 1/2 cup White Onion, chopped
– 1/2 cup Mini Bell Peppers, chopped
– 3-4 Garlic cloves, minced
– 1 Pk. Soy Chorizo
– 2 cups Green Lentils, rinsed
– big can Fire-Roasted Tomatoes, blended
– 1 cup TVP
– 3-4 cups Water
– 1/2 pk Chili seasoning
– 1 tsp. cumin
– salt & pepper
*Cook on Medium Low for 30 min until cooked, adjust seasonings to taste
*Optional: Add can of Black Beans
* 5-6 Russet Potatoes + Oil + Salt (Air Fry 20-25m at 400 degrees)
Toppings: Green Onions, Vegan Cheese, Vegan Sour Cream etc

3.) Red Bean Enchilada Bake with Spanish Rice & Cashew Queso

– 1 1/2 cup Spanish Rice + water
– 2-3 Zucchini, sliced
– 2 cans Kidney Beans, drained/rinsed
– 12 corn tortillas
– 3 tsp. ground cumin
– 6 tbsp. cashew butter
– 6 tbsp nutritional yeast
– 3/4 tsp. ground tumeric
– 1 1/2 tsp. smoked paprika
– 3/4 cup pickled jalapeños

4.) Vegan Tuna Penne Pasta
– 1/2 box mini penne pasta
– 2 celery stalks, finely chopped
– 1/2 red onion, finely chopped
– 2 packs “Good Catch” Vegan Tuna
– 3-4 Tbsp. Sweet Relish
– 2/3 cup Vegan mayo
– Juice of half a lemon
– 1/2 cup edamame beans
– 1 tsp garlic powder
– 1 tsp onion powder
– Salt + Pepper to taste

* optional: add Avocado when served
