Hey y’all! I’m back with more vegan recipes and this time we are meal prepping! Yass! Simplifying our life and allowing more time for things that matter, all while ensuring the what we eat is healthy and nutrient dense. Pineapple Spinach:
1 banana
1 handful of fresh spinach
1 1/2 cup frozen pineapple

Day of: I add 11/2 cup coconut water, 1 tbl of ground chia, 2 stevia

Peach Mango Smoothie:
1 banana
1 cup frozen peaches
1/2 cup frozen mango

Day of: I add 11/2 cup coconut water, 1 tbl of ground chia, 2 stevia

Spaghetti Squash & “Meatballs”:

1 spaghetti squash
shimmy of salt
shimmy of pepper
drizzle of olive oil

2 tbl ground flax seed (flax meal)
5 tbl water
1 small onion chopped
1 husky tbl of minced garlic
12 oz of sliced mushroom
1 15oz can of black beans (drained, not rinsed)
1 cup old fashion/rolled oats
1/4 cup bread crumbs
2 tbl tomato paste
1 tbl vegan Worcestershire sauce (sub bbq sauce)
shimmy smoked paprika
shimmy of sea salt
shimmy of garlic powder
shimmy of onion powder
shimmy of pepper
shimmy of Mrs. Dash Salt-Free Italian Seasoning

If you are baking your “Meatballs”
Preheat oven to 400 degrees. Line pan with parchment paper. Place meat balls on pan, brush with oil, bake for 30-40 minutes until golden brown.

Pan Fry “Meatballs”
Place desired oil in pan on medium high heat. Heat “meatballs” on all sides until golden brown on all sides. About 5-8 minutes.

Chunky Pasta Sauce:
2 shallots
1 husky tbl minced garlic
1 red pepper
1 green pepper
12 oz mushroom (any mushroom you prefer)
3 cans 28 oz crushed tomatoes
2 handfuls chopped fresh spinach
3 stevia extract peppers
Mrs Dash Salt Free Italian Seasoning
shimmy of sea salt
shimmy of pepper
shimmy of garlic powder
shimmy of onion powder

Jerk Mushroom Stir Fry:
2 packs of King Oyster Mushroom (sub any mushroom you prefer)
6 green onions (Just the white part)
1 tsp ground ginger (use fresh if you’d like)
2 tsp dry jerk seasoning
1 tbl wet jerk seasoning
1 scotch bonnet pepper (optional)
1 tsp poultry seasoning
2 tsp smoked paprika
2 tsp thyme
2 tsp onion powder
1 tsp allspice
shimmy of sea salt
drizzle of olive oil
1 red pepper
1 green pepper
1 yellow pepper
2 packages of Trader Joe’s Cauliflower Rice (seasoned w/ salt&pepper)
