– 1 fig
– As much coconut yoghurt as your heart desires
– drizzle of maple syrup

⚡︎SNACK⚡︎

Tonic latté with
– 1 tsp organic decaf coffee
– 1 tsp reishi
– 1 tsp lionsmane
– 1 tsp schisandra

⚡︎LUNCH⚡︎

Raw green soup:
– 3 cups of curly kale
– Half a head of romaine lettuce
– 1/2 zucchini
– 2 tbsp fresh onion
– 1 garlic clove
– 1 medjool date
– 1-2 tbsp apple cider vinegar
– Seasoning: 2 pinches of salt, herbs de Provence
– 1/2 avocado
– 1 cup filtered water

⚡︎OAT COOKIES⚡︎

I ended up changing the recipe quite a bit from Deliciously Ella’s version of it, so here’s how I made them:

– 3 ripe bananas (her recipe asked for 4 tbsp maple syrup but I left that out because the 3 bananas already gave enough sweetness to the batter on their own)
– 2 heaping tbsp peanut butter
– 1 tbsp almond butter
– 1 tbsp coconut oil
– 1 tsp vanilla extract
– 1 tbsp cinnamon
– 1 tsp ginger powder
– 2.5-3 cups oats

Bake on 180 Celsius until golden brown (about 15-20 min) These make about 15 cookies.

⚡︎DINNER⚡︎

[1] in a pan cook: sliced mushrooms (1 pack), sliced courgette (1/2 medium) and 1 cup of frozen peas

[2] add your rice noodles (or pasta if you prefer) to boiling water and cook according to the package’s instructions

[3] for the pesto sauce, use 1 cup cashew sauce as your base (*) then add 5 sprigs of fresh basil, 1 cup rocket, 1 small handful of Brazil nuts, 1 tsp miso paste, 1 garlic clove, 1 tbsp apple cider vinegar and 1/4 cup water

* cashew sauce recipe:
– 2 cups cashews
– Juice of 1 lemon
– 1 tbsp apple cider vinegar
– 1 tbsp tamari
– 1 garlic clove
– A few pinches of salt
