Sweet Potato Stew

1 cup red lentils
1-2 sweet potatoes
1/2 red onion
2-3 garlic gloves
2-3 cups baby spinach
3 tbs natural almond butter
1 can diced tomatoes
2 1/2 cups water or vegetable broth
1 bullion if using water
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 turmeric
1/2 tsp coriander
Salt and pepper to taste

Cut onion and garlic, saute in a bit of water.
Cut potatoes into half inch pieces, add to onion and garlic mix, mix well and saute for a few minutes
Add all spices, lentils, water, almond butter, and tomatoes mix well. Bring to boil, cover and reduce to simmer. Cook for about 40 min, until potatoes are soft. Add spinach, mix and cook for a few more minutes.

Cauliflower / Red Lentil Tacos

1/2 onion
2-3 garlic gloves
1/3 of a cauliflower head
1 cup red lentils
1 cup water
1 can diced tomatoes
3-4 tbs tomato paste
1 tsp chilli powder
1/4 tsp salt
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp paprika
A bid of dried jalapeño and siracha

Cut onion and garlic and saute in a bit of water. Cut cauliflower into small pieces and add. Saute for a few minutes. Add all other ingredients, mix well and bring to boil.
Reduce heat and cover. Cook for about 20-25 minutes .
Top some corn tortillas with the taco mix, add avocado or toppings of your choice

Red Lentil Soup

5 cups water or vegetable broth
1 bullion if using water
1 cup red lentils
1/2-1/3 cup brown rice
1 diced bell pepper ( red or yellow )
1 can diced tomatoes
1 can corn
1 tsp or more paprika
Salt and pepper to taste
A bit of red pepper

Bring water or vegetable broth to boil
Add all ingredients. Bring to boil. Reduce to simmer and cook for about 40 min or until rice is done.
Enjoy

Red Lentil / Peanut Curry

1 white onion
2-3 garlic gloves
2 small zucchini
1 carrot
3/4 cup frozen peas
1 cup red lentils
2 1/2 cups water or vegetable broth
3 heaping tbs peanut butter
1/2 tsp turmeric
1/2 tsp cumin
1/4 tsp paprika
1/4 tsp cayenne pepper
Salt and pepper to taste

Cut onion and garlic, saute in some water. Add cut zucchini, the carrot and the frozen peas, mix and saute for a few more minutes
Add spices, peanut butter, lentils and water, mix well.
Bring to boil. Cover and reduce to simmer. Cook for about 20-25 min, until lentils are done.
Serve on a bed of brown rice
