Tabbouleh: (make a large batch it lasts well!)
– 2 cups bulgur wheat
– 3 bunches fresh parsley stems removed & finely shredded
– 1 cup fresh mint shredded
– 1 large cucumber diced into small chunks
– 4 medium tomatoes diced
– juice of 2 fresh lemons
– garlic infused olive oil (optional)
– salt & pepper 🙂
