Red Lentil & Quinoa Stew Recipe:

Red lentil, quinoa veggie stew: (makes 4-5 ish servings, with greens)
– 1 cup split red lentils
– 1 cup dry quinoa
– large diced white onion
– 2-3 large carrots diced
– as much kale as you can fit in (I used a whole large bag, remember it wilts!). You could also use spinaaaaach or broccoli
– large can of chopped tomatoes
– 1 tsp cinnamon
– 1 tsp turmeric
– 1 tsp cumin
– 2 -3 tsp ground garlic (or 2-3 cloves of minced fresh)
– 1 cube veggie stock with 5-6 cups water
– salt & pepper to taste
– make as shown (I used a little oil then extra water for frying the veggies)
– top with diced soft avocado & a drizzle of good good tahini 🙂
