VEGAN MEAL PREP FOR WEIGHT LOSS – WEEK 4. This week I am making root vegetable stew and a yummy brown rice risotto and other bits and pieces. If you got an Instant Pot or a Thermomix, both of these recipes are made even quicker and with less effort!

Root Vegetable Stew

1 large onion, chopped
2 sticks of celery, sliced thin
2-3 Tbsp tagine spices
2 cans chopped tomatoes
2 cups of water or stock
2 large parsnips, chopped
4 medium potatoes, chopped
1 celeriac, chopped
2 carrots, chopped
1 large sweet potato, chopped
2 Tbsp vegetable stock powder

Risotto

1 medium onion, chopped small
1 celery stick, sliced thin
3 Tbsp solidified coconut milk from the top of the can
320 brown short grain rice
1 tsp onion powder
750 ml stock
