vegan stuffed peppers
slice 5-6 poblano peppers , rub with sea salt and a little oil. Bake at 400 for 15 mins. Next
add 1 yellow diced onion and half green pepper in skillet and saute until tender. Next add 1/2 cup frozen corn, 1 cup canned pigeion peas, half package of trader joes beefless ground beef let cook for 5 mins. Next add 4 TBS chipotle sauce. Stuff with peppers and add a little shredded dairy free mozzerella cheese on top if you choose. ( I used daiya) Cover with foil and bake at 400 for 45 mins.

Chickepa salad
half red pepper diced
1/4 yellow onion diced
3 TBS relish or diced pickles
1-2 stalks diced celery
2 TBS vegan mayo ( i used hellmans.)
2 TBS hummus (trader joes spicy hummus) its not spicy
1 tsp dijon mustard
2 tsp fresh dill
garlic powder
black pepper

salt pepper
and oil. bake at 400 until crispy abotu 25 minutes

green beans
cook down with water then add salt, and 1 tsp minced garlic
