Vegan Meal Prep For Weight Loss – Week 8

Meal prepping for a week ahead helps you stay on track with healthy plant based eating and on your weight loss journey. This week I am preparing an oriental stir fry, French onion soup and my lemon hummus.

Oriental Stir Fry

1 onion, sliced
1 stick of celery, chopped
1 carrot, chopped
1 fennel bulb, sliced thinly
100g green beans, chopped roughly
1 Tbsp fresh grated ginger (about 5 cm piece)
2 pointed peppers, sliced
1 carrot, peeled into ribbons
1 courgette, thinly sliced
1 bok choy, chopped
4 garlic cloves, crushed
4-5 Tbsp soy sauce

French Onion Soup

4 large onions, sliced
5 garlic cloves, sliced
2 bay leaves
2 sprigs of fresh thyme
2 pinches of salt
A few grinds of pepper
1 cup of port wine or red grape juice
1/2 cup white miso paste or 1/4 cup brown or red miso paste
2-4 Tbsp nutritional yeast flakes
1 litre of water
