L A S A G N A

-12 lasagna noodles
-3 stalks of kale (I used spinach)
-handful of mushrooms
-small squash
-marinara
-half a block of tofu
-3 spoonfuls of soy cream cheese
-handful of nutritional yeast

-Layer bottom of pan with marinara, then noodles
-Add layers of veggies, sauce, more noodles,
-Mash tofu, cream cheese, and nutritional yeast to make ricotta
-Spread ricotta layer
-Add layer of noodles, top with sauce, bake for 40 min

C H I C K P E A C U R R Y
-can of drained chickpeas
-carrot & bell pepper (I would replace pepper with potato)
-1 cup of coconut yogurt
-spoonful of curry & garlic salt

-cook all ingredients in a pot until soft
-add seasoning

S A M O S A S
-puff pastry dough
-one potato
-2 handfuls of frozen veggies
-spoonful of curry powder & garlic salt

-Chop potato and boil with frozen veggies until soft
-Drain, then mash potatoes + veggies
-Add seasoning to mash
-Cut pastry dough into squares
-Fill squares with potato / veggie mash
-Fold samosas & bake for 30 min
