Mediterranean Quinoa Salad
Serves about 4

Ingredients:

1 c cooked quinoa
¼ tsp ground cumin
¼ tsp turmeric
1 c diced tomato (about 1-2 medium ripe tomatoes)
1 c chopped cucumber
½ c diced red onion
1 tbsp finely chopped basil
1 lemon squeezed for juice
real salt & pepper to taste

Directions:

Toss all fresh, organic ingredients in a bowl. Enjoy!

Avocado Chickpea Salad
Serves about 8

Ingredients:

4 cups cooked chickpeas, spiced with: (optional)
½ tsp cayenne pepper
½ tsp paprika
1 small red onion, diced
2 cloves fresh garlic, peeled & minced
1 lemon zest & squeezed for juice
½ c chopped cilantro
1 coarsely chopped avocado
real salt & pepper to taste

Directions:

Toss all fresh, organic ingredients in a bowl. Enjoy!

Oat-Free Granola Crunch
Serves about 10 ½ c servings

Ingredients:

5 c uncooked quinoa flakes
1 ½ c fresh pitted dates
2 lemons zest
1 tsp ground cinnamon
1 tsp pure vanilla extract
1 tsp real salt

Directions:

Preheat oven to 350 degrees Fahrenheit.
Place quinoa flakes in a large mixing bowl, set aside. Line large baking pan with parchment paper to prevent sticking to pan.
Bring two cups of purified water to a boil, add dates, let boil for about 10 minutes.
Once dates are boiled, place soft dates into blender with lemon zest, cinnamon, vanilla & real salt. Process until smooth & creamy texture forms.
Add date mixture to quinoa flakes, mix evenly.
Bake for 40 minutes, stirring when needed until crispy.
Let sit & cool before storing to optimize crispiness.
