CARIBBEAN SWEET POTATO RECIPE
2 large sweet potatoes – we call them Kumara in New Zealand!
2 large red onions, chopped
2 cloves garlic, minced
2 cans (800ml/28 ounces) whole tomatoes in juice
1 can (400ml/15 ounces) chickpeas, drained
1 can (400ml/15 ounces) red kidney beans OR another tin of chickpeas
1 teaspoon paprika
1/2 teaspoon pink Himalayan salt
1 teaspoon thyme
1 teaspoon ground black pepper
1/2 teaspoon allspice
1/2 teaspoon cumin
2 tablespoons tomato paste
Fresh chopped parsley or dried parsley
Peel and dice sweet potatoes into 1-inch cubes.
In a crock pot, combine sweet potatoes, onion, garlic, tomatoes, beans, paprika, salt, thyme, pepper, allspice, cumin and tomato paste. Cover and simmer on high until sweet potatoes are tender, about 4 hours.
Serve with basmati brown rice, top with parsley and a side of guacamole.
