I absolutely love ramen, it’s just a bowl of comfort food and perfect for these chilly days. So yum and so healthy with the veggies but oh sooooo delicious! Feel free to add whatever veggies you have.

Recipe:
Fry 1/2 onion
1 tsp ginger/garlic
1 tbsp red curry paste
3 cups vegan stock
1 can coconut cream
udon noodles
veggies of your choice, I used mushrooms and broccolini
season with salt and pepper
add fresh coriander
serve with chopped cashews (optional)
