Wondering what a vegan in New York City eats during lockdown? This video provides simple and nutritious plant-based recipe ideas for those new to the lifestyle or familiar with eating vegan!

Breakfast: Chocolate Waffles
– 1 C oats, ground into flour
– 1 T cacao powder
– 1 T sweetener (i use granulated monk fruit)
– 1 t maca powder
– cinnamon, cardamom, cloves
– 1/4 C pumpkin puree
– 1/3 C plant milk
– dash of maple syrup (i used sugar-free)
(combine + cook according to your waffle iron)
– banana
– strawberries
– sunflower seed butter
– coconut shreds
– maple syrup (i used sugar-free)

Lunch: Salad with Avocado Dressing
– greens
– dressing: guacamole + miso paste + ginger + hot sauce
– japanese sweet potatoes
– adzuki beans
– ginger carrots
– hemp seeds
– seasonings

Dinner: Peanut Butter Plantain Pad Thai (recipe video)

Dessert: Chocolate Toast-
– dark chocolate (i love Lakanto, from Thrive Market)
– sunflower seed butter
– date
