🍲ROASTED CAULI & COCONUT FLATBREADS
*for the cauli*
1 head of cauliflower
salt
pepper
garlic
tumeric
paprika
cumin
(I freestyle the spices)
drizzle of olive oil

*for the tzatziki*
200g oatly creme fraiche
half a courgette grated
juice of a lime
tbsp olive oil
salt
pepper

*for the flatbreads*
1 cup plain flour
1/2 cup coconut flour
1tbsp baking powder
1.5 tbsp olive oil
pinch of salt
1/2 cup water

METHOD
1. Cut up your cauliflower into florets & add to a baking tray. Cover with a drizzle of oil & your spices. Mix it all together so every piece is well coated. Add it to your oven at 180 degrees(C) for 35 minutes.

2. Mix together your ingredients for the tzatziki.

3. Mix your flatbread ingredients in a bowl & knead until it’s binded. cut into 5/6 portions, flour your surface and roll out into a round. Add some oil into a hot pan & add a bread. Fry on each side until golden then serve.

🥛CASHEW MILK

METHOD
1. Soak your cashew nuts in a bowl of water for 2 hours to soften.

2. Drain your nuts & measure out (((250ml of water)))) add to a blender a bit at a time with the water & blend until smooth.

3. Strain your milk through a muslin cloth to get rid of any chunks or thick parts then transfer your milk into a bottle and keep in the fridge.

🍫CHOCOLATE CASHEW MILK
cashew milk
1 date
1.5 tbsp cocoa powder

METHOD
1. mix all ingredients together & blend.

🥣CREAMY CAULIFLOWER SOUP
1 head of cauliflower
salt
pepper
garlic
paprika
olive oil
red onion
knorr veg stock pot
double/single cream
lemon

METHOD
1. Cut up your cauliflower into florets & put into a baking tray with your seasoning. Roast at 180C for 35 minutes.

2. Chop up your red onion & fry in a pain with a dash of oil. Boil the kettle & make 500ml of veg stock with a stock pot or cubes. Add the stock to the pan with the onion, let it simmer.

3. Take your roasted cauliflower out of the oven & add it to the stock mix, let it simmer for another 10 minutes or so to combine flavours.

4. Wait for the mix to go cold (important!!!) & add to your blender with a dash of cream & squeeze of lemon juice. Blend until creamy.

🥜CHOCOLATE PEANUT BUTTER OVERNIGHT OATS
160ml oat milk
1/2 cup rolled oats
1/3 cup greek yoghurt
tbsp chia seeds
1/2 tsp vanilla extract
2 tbsp peanut butter
2 tbsp cocoa powder
pinch of salt
tbsp honey

METHOD
1. Add all the ingredients into a bowl & mix well. Transfer into an air tight jar or container & keep in the fridge overnight then eat for breakfast with your desired toppings!

🍓CHIA SEED PUDDING
2 cups of oat milk
1 cup chia seeds
drizzle of honey
tsp vailla extract

METHOD
1. Combine all ingredients together & mix well ensuring every seed is coated. Put in a container & store overnight giving it enough time for the seeds to puff up. Serve with your desired toppings.
