Banana Bread (Grain-free & Vegan) | COOKING WITH BABY J

Guys, it’s become increasingly difficult for me to film videos at home during Covid. So, for this video I decided to lean into being a working mom, and have Baby J join me! We love cooking together, and filming this was SO MUCH FUN!
To respect her privacy I’ve put a little blur on her face. Hopefully it doesn’t take away from the charm of cooking with Baby. Enjoy!

2 cups almond flour
1/4 cup arrowroot flour
1/4 cup coconut flour
1/4 cup ground flax seed
3-4 tbsp coconut sugar
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
2 ripe bananas + more for topping
2 tbsp coconut oil
1 tsp vanilla extract
1/2 cup walnuts or pecans
1/2 cup vegan chocolate chips

Preheat oven to 350°, and grease your loaf pan, or line with parchment paper, if necessary.
In a large bowl combine the flours, flax seed, sugar, baking soda, cinnamon, and salt. Whisk well.
In another bowl mash the banana, then add the coconut oil, and vanilla extract. Whisk.
Pour the wet ingredients into the dry, and stir well.
Fold in the nuts and chocolate chips.
Pour into the loaf pan and spread evenly.
Bake for 40-45 minutes, until a toothpick comes out almost clean.
Allow it to cool for about 15 minutes (or longer) before enjoying!
