Falafel Recipe
– 2 cups of DRY chickpeas/garbanzo beans
– 1 cup chopped parsley
– 3/4 cup chopped cilantro
– 1 to 2 minced serrano peppers (with seeds)
– 1 medium onion, chopped (maybe a little less)
– 6 cloves garlic, minced
– 1 tbsp toasted sesame seeds (optional)
– 1.5 heaping tsp ground cumin
– 1/2 tsp ground cardamom
– 1 tsp paprika
– 1/2 tsp pepper
– 2 tsp salt
– 1.5 tsp baking powder
– 3 tbps gluten-free flour or chickpea flour (add a little at a time so mixture isn’t too dry)
– Grapeseed or Avocado oil for frying (can use another oil that isn’t olive oil, but these are best for high temps)

1. Soak dry chickpeas in water for 24hrs or at least 8 hours/overnight (no canned chickpeas!)
2. Grind chickpeas in food processor until it resembles course salt (not too smooth)
3. Mix in all other ingredients in with ground chickpeas, holding the flour
4. Slowly add in flour until mixture is able to be formed into a ball without falling apart
5. Use ice cream scoop to measure out balls and form with hands. Place on baking sheet and let rest for at least 30 mins
6. Deep fry or pan fry falafel until golden brown and crispy. Place on paper towel to remove excess oil and serve warm! Can also try baking it in the oven at 400 degrees or in the air frier…but I haven’t tried that so don’t come for me if it doesn’t turn out right! lol

I served it with a side of air-fried potatoes, fattoush salad, rice, hummus and toum (garlic sauce). Also great with tahini sauce, but I could find any at my grocery store 🙁
